Maple Walnut Corn Bread
1 1/3 cups sifted all-purpose flour 4 tsp baking powder ½ tsp salt 2/3 cup cornmeal 2/3 cup milk 1/3 cup maple syrup 2 eggs, lightly beaten ¼ cup butter, melted ¼ cup maple syrup ½ cup walnuts, coarsely chopped Directions: Heat oven to 375°. Grease 9-inch square cake pan. Sift flour, baking powder and salt into a large mixing bowl. Stir in cornmeal with fork. Combine milk, 1/3 cup maple syrup, butter, and eggs; add to dry ingredients. Stir in just until blended. Spoon into pan and smooth. Drizzle remaining ¼ cup maple syrup over batter. Sprinkle with walnuts. Bake for 25 min. or until a toothpick comes out clean. |
